My new favorite thing

So, I made these last June when it was my turn to host bonko and everybody LOVED them. I made one for lunch today and was reminded why everyone raved.

you take two flour tortillas as big or as small as you desire. Spread a thin layer of apricot preserves on one of the tortillas (I use smuckers). On top of the preserves place thin slices of brie cheese - make sure you leave about an inch margin around the outer edge of the tortilla so when you cut the quesadilla everything doesn't get smushed out. On top of the cheese place a couple of thin slices of smoked turkey - I just used 'lunch-meat' type slices and it was great.

In a frying pan, add some oil or butter or Pam or whatever you want really and then place the loaded tortilla in the pan and put the other tortilla on top. Cook for a couple minutes on each side until the cheese is nicely melted and the tortillas are browned to your liking.
